Who ?

Five kilometers north of Bizerte, all the women in the village prepare the hlelem, which will be collected once a month. It took a bit of coordination to ensure the hlelem were uniform, as some preferred wider ones, others longer ones, and in the end, they are very happy with the result today.

How ?

Everything is handmade

After preparing the dough, which is mainly made from wheat semolina and a little flour, water, and oil, the artisans move their hands back and forth in opposite directions to form a fairly thin string. The ends are then taken between the thumb and forefinger, broken into small pieces, rolled, and thinned.

The hlelems are then dried in the sun

A light addition of pasta to a soup or salad provides energy without overdoing it.

When ?

In 10 minutes in boiling water, the hlelem are cooked.

They can therefore be added to a soup during the last 10 minutes of cooking or taken out and used after they have cooled in a salad.
