Moringa oleifera, often called simply "Moringa" or "ben-winged", is the most widely cultivated species of the genus Moringa of the monotypic family Moringaceae.

Native to India and Sri Lanka, it is now acclimatized in almost all tropical regions: this small, fast-growing, drought-resistant honey tree can reach up to 10 meters. Its young pods and leaves are used as vegetables. The axillary buds on the green stem appear from mid-May, when plant growth resumes. The seeds are also used to purify water, as a detergent, or as a medicinal plant.

Moringa oleifera leaves are the most nutritious part of the plant. Nutritional analyzes have shown that they are richer in vitamins (B1, B2, B3, B5, B6, B8, B9, A, C, E), minerals (potassium, calcium, magnesium, iron, manganese, selenium) and protein than most vegetables. They contain amino acids including essential amino acids (isoleucine, leucine, lysine, methionine, phenylalanine, threonine, tryptophan, valine). They contain twice as much protein and calcium as milk, as much potassium as bananas, as much vitamin A as carrots, as much iron as beef or lentils and twice as much vitamin C as orange.

They constitute an important source of vitamins B, C, proA (beta-Carotene), K, manganese, proteins and other essential nutrients. Cooked moringa leaves are one of the foods with the highest levels of nutrients.
