Geranium water, called Atrechyia, is much less well-known in France but is also a staple ingredient in Tunisian cuisine. Geranium, prized for its fragrance, was cultivated in North Africa where it could seek refuge from the cold and delight the artisans who have distilled it for generations.

Very present in pastries, it is often used to flavor desserts and creams.
