When couscous is handmade with love and sunshine, it's just so good! Made with wheat from the major crop-growing region of the North. Tip: cook with fish, just like in Bizerte, the region our couscous comes from.
Where?
Between the mountains and the sea, at the tip of Africa, stretching to the North-West of the Gulf of Tunis, lies the Bizerte region. Less variable rainfall has allowed the North of the Medjerda to grow grain for centuries.
It is from this Bizerte region that this couscous originates.
Who?
Every summer, to take advantage of the wheat season and the sun, families in Tunisia would gather to prepare the "Aoula" (provisions for the year). While each family made different provisions, couscous was present in every "aoula."
Today, few families in Tunisia continue to make it due to a lack of time, space, and now, know-how.
Seniatna collaborates with 8 craftswomen from the Bizerte region who live in the countryside and thus have enough space to prepare the couscous. They prepare it just like the one they make for their own families, just as their mothers did, and their grandmothers before them...
How?
The durum wheat semolina is lightly moistened and rolled by hand.
The resulting grains are passed through a fine sieve, then they are moistened, rolled, and mixed with fine semolina.
They are then sifted again, steamed, and left to slowly dry in the sun.
Everything lies in the skill and delicacy of the craftswomen and the intense summer sun.
What?
Pronounced wheat flavor
Loose grains that don't stick together
Why?
Pairing perfectly with various vegetables and meats, you can have a balanced meal.
Couscous is a starch lower in calories than bread (169 vs 258gr)
Couscous is rich in selenium, a powerful antioxidant.
Warning: contains gluten
When?
Cook it with a couscoussier, as in Tunisia, to give it perfect steaming.
Pair it with plenty of vegetables (zucchini, carrots, pumpkin) and legumes (fava beans, chickpeas) to have a balanced meal.
