The traditional fez is made of combed wool knitted by the women who make the kabbous hats. These hats are then sent for fulling: they are soaked with hot water and soap and trodden underfoot by men to thoroughly saturate them, to the point where the knit stitches almost disappear. Next comes the carding process, using a carding or combing brush to transform the felt into a soft, velvety texture. However, increasingly, the carding brush is replaced by a wire brush. It is at this stage of production that the fez is dyed its famous vermilion red, although it is now available in a wider variety of colors.
